Recipe For Fresh Corn Tortillas

Two days ago we had tacos for dinner. We made homemade tortillas. This is how you do it:

First you take 3 and one half cups of masa para tortillas. My family has lots of bags of it in our food storage. You add water - hot water - and squish the dough with your fingers until it feels mushy. Then you make little balls out of the big dough and form them into spheres. This much makes about 30 very small tortillas (about 4 inches).

The next step is the hardest. You need a tortilla press and a strong person (I used my dad). I put a ball on the open tortilla press and dad covers the ball with plastic so it doesn't stick. Then dad squishes the ball into a flat tortilla. Mom cooked them on the hot griddle (Oh, yeah, you need a hot griddle). The tortillas only cook for a few seconds on each side.

When the tortillas are done you get salsa, sour cream, taco meat, refried beans, grated cheese and guacamole and stuff the tortillas. And you eat them (If you have these items you don't have to put them on the tortilla).

I like all of those fillings, but I also like eggs, onions, tomatoes, and salad and other things. These are very versatile.

Thank you for describing how tortillas are made. I was thinking about them recently since I have to make all sorts of stuff without wheat for my kids. I did not know there was a press involved!

Sheldon, You only use Masa Para tortillas and water to make tortillas? I have never made them before. Where can I get a tortilla press? I really like your blog.
